Ingredients
For the caramel sauce
- 100 grams refined sugar
- 125 ml. cream
- 15 grams butter
- ½ teaspoon sea salt.
For the banana ice cream
- 2 ripe bananas
- 250 ml. cream
- 195 grams of condensed, sweetened milk
- ½ teaspoon vanilla extract.
Preparation
For the caramel sauce
- In a saucepan heat the sugar on low heat and let it melt until it forms a caramel amber. Heat the cream in another pan and keep warm.
- When the caramel is ready remove it from heat and add the cream. After bubbling incorporates butter.
- If the caramel begins to harden slightly warmed over low heat and stir gently. Stir in salt to taste and let cool completely.
For the banana ice cream
- Mash bananas by hand or in a food processor until smooth.
- Beat cream until soft peak form and carefully incorporates the condensed milk and vanilla until combined. It incorporates the banana.
- Pour half of the mixture to a container. Add cooled candy with a spoon and turn to add to ice cream mixture. Add the remaining cream on top and add more candy to taste. Covering with plastic wrap and frozen overnight.
