Ingredients (4 servings)
- 1 cup whole wheat flour
- 1 cup flour
- 4 teaspoons baking powder
- 1 tablespoon sugar
- 1 teaspoon salt
- 1½ cups milk
- 2 eggs
- 2 teaspoons vanilla extract
- 2 large bananas, mashed
- 1 cup strawberries, chopped.
Preparation
- Blend the flours, baking powder, sugar and salt in a large bowl.
- Whisk the eggs, vanilla and milk in a small bowl. Pour over flour mixture and beat until combined. Stir banana mixture. Carefully add the strawberries.
- Pour ¼ cup batter onto skillet coated with cooking spray over medium heat. Turn after 3 minutes or when bubbles form on the edges of each pancake, heat for another 2 minutes.
- Serve with butter and maple syrup.
