Ingredients of Beef Stew with Garlic Mayonnaise:
For the marinade:
- 300 ml red wine
- 5 tablespoons olive oil
- 1 celery
- 3 chopped shallots
- 1 chopped carrot
- 2 minced garlic cloves
- 2 teaspoons pepper
- 2 bay leaves
- 1 pinch of rosemary
- 1 pinch of parsley.
For the stew:
- 1.3 kg solid beef meat
- Black pepper
- 12 peeled carrots
- 2 minced garlic cloves
- 2 sprigs of rosemary
- 2 sprigs of thyme
- 2 bay leaves
- 4 tablespoons parsley
- 2 strips of bacon
- 100 grams of olives
- 4 peeled and chopped tomatoes.
For beans with garlic mayonnaise:
- 3 egg yolks at room temperature
- 5 tablespoons olive oil
- 1 teaspoon mustard
- Black pepper
- Garlic to taste
- 9 cups cooked beans drained and mixed.
Preparing
Place the marinade ingredients in a saucepan. Put it on the fire and when it boils, reduce heat and simmer for 20 minutes. Let cool.
Season the meat with salt and freshly ground pepper and place in a large bowl. Pour the marinade over the meat, cover and marinate in the refrigerator during the night or for at least 6 hours.
To make the stew preheat oven to 170° C. Put the marinated meat in a large pot. Add carrots. Strain and pour the marinade over the meat. Add the garlic, thyme, rosemary leaves, bay leaves and parsley. Cover the meat with the bacon, then add a layer of a sheet of waxed paper on top and cover with a lid.
Cooking in the oven for 2 hours. Add olives and chopped tomatoes and cook covered for another half hour.
Meanwhile, prepare the beans with garlic mayonnaise. Do the mayonnaise beating the egg yolks with the mustard. Season with salt and freshly ground pepper. Add the olive oil drop by drop to start, beating well between each addition. Mix garlic mayonnaise.
In a large pot gently heated beans. Let cool slightly and mix with garlic mayonnaise.
Serve the meat with beans and mixed salad.
