- 15g butter;
- 15g flour;
- 25cl milk;
- Melt the butter in a large saucepan. Heat the milk in a saucepan.
- Pour at once all the flour into the melted butter and whisk briskly.
- Cook over low heat for 2 minutes, stirring constantly, until the mixture is smooth.
- Remove pan from heat and gradually add the milk, whisking gently.
- Return to heat for 12 minutes, stirring regularly. Warning: it should not be boiling.
- Add salt, pepper and nutmeg to your liking.
