Strawberry and banana Hotcakes

Ingredients (4 servings)

  • 1 cup whole wheat flour
  • 1 cup flour
  • 4 teaspoons baking powder
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1½ cups milk
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 large bananas, mashed
  • 1 cup strawberries, chopped.

Preparation

  1. Blend the flours, baking powder, sugar and salt in a large bowl.
  2. Whisk the eggs, vanilla and milk in a small bowl. Pour over flour mixture and beat until combined. Stir banana mixture. Carefully add the strawberries.
  3. Pour ¼ cup batter onto skillet coated with cooking spray over medium heat. Turn after 3 minutes or when bubbles form on the edges of each pancake, heat for another 2 minutes.
  4. Serve with butter and maple syrup.
