Salmon Burger with Hoisin sauce

Ingredients (4 servings)

  • 1/3 cup water
  • ¼ cup apple cider vinegar
  • 1 teaspoon sugar
  • ½ teaspoon of garlic, chopped
  • ½ teaspoon fresh ginger, peeled and chopped
  • ¼ teaspoon pepperoncino
  • 24 cucumber slices, thin
  • ½ cup Panko
  • 1/3 cup green onion, thinly sliced
  • 2 tablespoons cilantro, chopped
  • 1 tablespoon soy sauce, low sodium
  • 1 teaspoon lemon zest
  • 500 grams of salmon in Alaska, finely chopped
  • 1 egg white
  • 1½ teaspoons sesame oil
  • 1 tablespoon Hoisin sauce
  • 4 hamburger buns with sesame seeds, toasted.

Preparation

  1. Combine first 6 ingredients in a small saucepan and bring to a boil. Remove from heat and add the cucumbers. Let stand for 30 minutes and drained.
  2. Toss panko and the next 7 ingredients in a bowl and beat well. Divide the mixture into 4 equal portions, carefully forming hamburger meat.
  3. Heat a large skillet over medium-high. Add sesame oil to the pan and heated meat burger for 3 minutes on each side. Spread the top of the meat with hoisin sauce and heat for another 30 seconds.
  4. Weapon the burgers by putting meat in each pan and cover with 6 slices of cucumber.
  5. Serves.
