Potatoes with Chorizo

Ingredients to prepare the Mexican recipe potatoes with chorizo:

  • 4 medium potatoes
  • 4 Sausages the size of the potatoes
  • ½ chopped onion
  • 2 minced garlic cloves
  • 1 finely chopped serrano or jalapeno chile
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon finely chopped parsley.

Preparing Mexican recipe potato with chorizo:
Cook the potatoes in a saucepan of salted water until tender but firm. You can peel the potatoes or leave them in the shell as you like. Chop the potatoes into 1cm cubes.

In a saucepan heat the olive oil, add the onion and crumbled sausage, then add the garlic and chilies. Cook until the sausage is browned. Turn off the heat and add the chopped potatoes and season with salt and pepper. Add the chopped parsley.

The potatoes with spicy sausage are eaten in taco or beans tostada, cream and green sauce.
